- 1 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. sugar
- 2 eggs
- 1/2 c. vegetable oil
- 1/2 c. buttermilk
- 1 tsp. vanilla extract or vanilla bean paste
To Make It
- Preheat oven to 350 degrees.
- Line 10-12 muffin cups with paper liners.
- In a medium bowl, whisk together the flour, baking powder and salt.
- In another bowl, whisk together the remaining ingredients and pour the wet into the dry. Stir just until combined.
- Spoon into prepared muffin cups.
- Bake for 17-18 minutes or until done.
Yield: 10-12 cupcakes
depending on how full you fill the muffin cups.
