Vanilla Cupcakes

What You Need

  • 1 c. flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. sugar
  • 2 eggs
  • 1/2 c. vegetable oil
  • 1/2 c. buttermilk
  • 1 tsp. vanilla extract or vanilla bean paste
To Make It

  1. Preheat oven to 350 degrees.  
  2. Line 10-12 muffin cups with paper liners.  
  3. In a medium bowl, whisk together the flour, baking powder and salt.  
  4. In another bowl, whisk together the remaining ingredients and pour the wet into the dry.  Stir just until combined.  
  5. Spoon into prepared muffin cups.  
  6. Bake for 17-18 minutes or until done.  
 
Yield: 10-12 cupcakes depending on how full you fill the muffin cups.
